We bought the Krispy Kreme doughnuts in the beginning of the video at Penn Station. Normally, we'd advise you to never ingest anything that has at any point entered or left Penn Station (for your health and safety), but we always make an exception for Krispy Kreme. And this is solely because there is only one Krispy Kreme location in New York City. Honestly don't get the hype for Krispy Kreme, to me, they taste ...fake and cheap yet over-priced. Each to your own, if you like it get it and enjoy it but you won't see me queuing up for one.

It has always been rumored for us food technology students (at least in my school) that krispy kreme doughnuts have amylase added in them. (Amylase is an enzyme that... breaks down starch to sugars which promotes more gas production) We theorize that it is the amylase that make it so airy and light. Also, enzymes are process aids, they get destroyed during cooking which means they are not required to be added in the ingredients list, as per FDA.

For the doughnuts: 30 ounces all purpose flour 1/2 ounce kosher salt 2 ounces honey 1 packet active dry yeast 4 ounces unsalted butter, cubed Combine together in a stand mixer and make a well. 4 ounces egg 2 ounces honey 1 ounce vegetable oil 1 Tablespoon vanilla extract 16 ounces whole milk Whisk together before adding into well in dry mixture and begin mixing on low until a shaggy dough forms. Once a shaggy dough has formed, increase the speed and mix until smooth and supple. Let sit for about an hour, or until nearly doubled in size, before immediately placing in a refrigerator and chilling until cold. Scrape the dough onto a floured surface and roll out until 1/2 inch thick. Punch out doughnuts and arrange each onto a separate piece of parchment. Proof until puffed, could be as soon as 10 minutes. Fry at 325 degrees Fahrenheit until golden brown. Let cool on a wire rack. For the glaze: 600 grams powdered sugar Pinch of kosher salt 2 teaspoons of vanilla extract 30 grams refined coconut oil 150 grams whole milk Whisk together until smooth Glaze doughnuts

Is there a draft in the kitchen? My father n law was a master bread baker he told me when there was a cold kitchen or draft in kitchen that effects the dough and it could cause holes in the bread!!

the Problemewith the big holes is actually because of the over night rise, some of the Gluten structure get lost, all you have to do is punch the air out 2-3 times before you let it rise to be rolled out (for those who dont like to waste dough by pinshing the donuts out you can jsut roll them like a Bagel) let them rise once more and let the a skin form at the end to help bith the stability also who needs baking powder in a dough

30 oz flour 0.5 oz salt 2 oz honey 1 packet active dry yeast 4 oz unsalted butter Make a well in center and pour in: (Separate bowl) 4 oz egg 2 oz honey 1 oz veg oil 1 tbsp vanilla 16 oz tepid whole milk Combine and mix slowly until shaggy. Increase speed and knead until dough is very smooth and supple and no longer sticky. Let rise until doubled at room temp and then refrigerate and chill until cooled, preferably overnight. Roll out dough to 1/2 inch thickness. Use circle cutter to cut out 3 1/4 inch doughnuts. Put each doughnut on its own square of parchment and let sit until puffed. Fill a Dutch oven a third of the way with a neutral oil and heat to 325F. Fry turning once 3-4 minutes. Let cool on a wire rack. Glaze: 600 g powdered sugar Pinch of salt 2 tsp. vanilla extract 30 g refined coconut oil 150 g whole milk
